Add a little fancy to your next cocktail party with these crowd pleasers:
1 sweet potato yields 2-3 dozen chips, why the broad range? Let’s just say the sweet potato is rather stubborn on the board and depending on the sharpness of your knife and your patience, you may lose a few along the way…
1 sweet potato, thinly sliced
4 ounces goat cheese brie or other soft-ripened cheese, rind removed
1 cup sprouts, I used broccoli
Lay out the chips on parchment paper on a cookie sheet. Brush with olive oil, sprinkle with salt. Bake the chips at 400º, one flip after 8-10 minutes to get a crispy chip. Depending on the thickness, roast the second side for an additional 5 minutes. Thicker slices will need more time. Watch ’em! They char quickly once they are ready.
With a spoon, mash the sprouts and cheese together and spread on chips!
